I always thought I didn’t like meatloaf. Turns out I just didn’t like the meatloaf I was being served. Sorry, Mom, you make a lot of delicious food, but your meatloaf is not for me.
When I was younger and I wasn’t as in love with filling my meals with vegetables, there was always something so heavy about meatloaf that I didn’t like. Then I started making this version and the tides shifted. I began spiking my meatloaves with veggies because my firstborn is a super picky eater. He had no problem eating meat of any kind. He loved it when I made him hamburger patties with cheese. I knew I had to start getting veggies in him but he really resisted. This recipe was born about six years ago and it is still how I make it today.
Not only does it add vitamins and nutrients but it also stretches a buck. I use ground buffalo, 1 lb. I prefer to buy quality meat and buffalo has great flavor too, so it stands up to all the veggies stuffed inside. Personally, I haven’t ever cared for ground turkey loaves. I feel the mild flavor of ground turkey just gets lost amongst all the other flavors and then nothing really shines.
With the addition of everything in the recipe, the 1 pound of buffalo feeds a family of 5 and there is just enough left over for my husband to take some to work the next day. I always serve it with roasted broccoli. My kids LOVE roasted broccoli, so we eat it a few times a week. Plus more veggies in the family make for a healthier family.
