Delicious and Healthy Meatloaf Recipe

I always thought I didn’t like meatloaf.  Turns out I just didn’t like the meatloaf I was being served.  Sorry, Mom, you make a lot of delicious food, but your meatloaf is not for me.

When I was younger and I wasn’t as in love with filling my meals with vegetables, there was always something so heavy about meatloaf that I didn’t like.  Then I started making this version and the tides shifted. I began spiking my meatloaves with veggies because my firstborn is a super picky eater. He had no problem eating meat of any kind.  He loved it when I made him hamburger patties with cheese. I knew I had to start getting veggies in him but he really resisted.  This recipe was born about six years ago and it is still how I make it today.

Not only does it add vitamins and nutrients but it also stretches a buck. I use ground buffalo, 1 lb.  I prefer to buy quality meat and buffalo has great flavor too, so it stands up to all the veggies stuffed inside. Personally, I haven’t ever cared for ground turkey loaves. I feel the mild flavor of ground turkey just gets lost amongst all the other flavors and then nothing really shines.

With the addition of everything in the recipe, the 1 pound of buffalo feeds a family of 5 and there is just enough left over for my husband to take some to work the next day.  I always serve it with roasted broccoli. My kids LOVE roasted broccoli, so we eat it a few times a week. Plus more veggies in the family make for a healthier family.

Don’t like the heaviness of a traditional meatloaf? Make a nutritious, cheap, delicious and veggie-packed meatloaf with this healthy meatloaf recipe.



  • 1 C grated carrot
  • 1 C grated zucchini
  • 1/2 C grated parmesan
  • 1 lb. ground buffalo
  • 1/2 onion, grated
  • 2 eggs
  • 1/2 C old-fashioned oats
  • 1/2 tsp sea salt
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Enough ketchup to cover the top of the loaf.


  1. Combine all ingredients and mix well.  Place a piece of parchment paper on a sheet pan.  Form into a loaf shape, making sure width, length and height is all even. I make mine about as high as my pinky finger. Lopsidedness will result in uneven cooking.

  2. Cook for 45-50 min. depending on your oven.  Remove from oven and let cool for 10 minutes.


  1. Preheat oven to 375 F.
  2. It will feel more tender than you are used to because there are so many vegetables inside.  Don’t make the mistake of thinking it is not done and then overcooking and drying it out.
  3. Do not cook in a loaf pan, this steams your meatloaf instead of allowing the outer edges to get crisp. This recipe is plenty moist without steaming it in a loaf pan.
