I mean, what’s better than going to bed knowing no one is screaming on top of their voices over breakfast the next morning? That’s what you get with this overnight steel cut oats.

With winter on the way, now is the perfect time to perfect your oatmeal game. Pun aside, it’s an art and every detail counts.

Why Steel Cut Oats?

Oats are made from oat kernels whose hulls (the tough outer shell that protects the oats) have been removed. There are different kinds of oats based on his they are processed. Oat groats can be made into rolled, steel-cut and quick-cooking oats. All of these oat types are healthy; however, some oats are high grade than others. Rolled and quick-cooking oats have milder and softer texture due to overprocessing, steel-cut posts we moderately processed to retain their chewy texture and nutty flavor.

Due to their processing method, steel-cut oats retain their fiber which is needed for easy digestion.

Is Overnight Steel Cut Oats Healthy for Me?

Yes. Oats, besides being easy to make, have a lot of nutritional benefits. Adding oats to your dishes can regulate (and even decrease according to this study) blood sugar level, lower cholesterol and aid weight loss. This recipe is also vegan and gluten-free.

Why Overnight?

Rolled and quick-cooking oats cook in few minutes, but steel-cut oats take 30 minutes there about to cook. The good news is, you can get steel-cut oats done in a wink.

How?

Add your steel cut oats to a pot of boiling water overnight. It takes you 5 minutes to do this the night before. You can also make a large batch from which you can make hot steamy bowls of oats for the cold mornings.

Scale

Ingredients

  • 1 C steel cut oats, I used Bob’s Red Mill
  • 2 ½ C unsweetened Almond Milk
  • ¼ C chia seeds
  • 4 medjool dates, pitted and chopped

Toppings

  • ¼ c frozen berries, thawed * see tips down below
  • 1 tbsp chopped pecans, or nut of choice, or none

Instructions

Add oats and almond milk to a microwave safe bowl that you have a lid for, but save the lid for later. Microwave 90 seconds. That’s it. We are just jump starting because they are steel cut oats BTW and very fiberous. Remove from microwave, stir in chia seeds and dates. Mix well, cover and place in the fridge for at least 8 hours. After sitting overnight add a couple of large scoops of the oats to a bowl with fresh or thawed frozen fruit. 


Notes

Tip

* I always have frozen blueberries or mixed berries on hand for smoothies. These are my go to with this recipe. Thaw a good ¼ C of berries, I prefer mine a bit warm so the mix of the warm berries with cold oatmeal is a nice marriage. Top with pecans.

Fun Swaps

  • Throw in some raisins.
  • Add some hemp seeds.
  • Drizzle with honey or pure maple syrup if you desire it sweeter.
  • Drizzle with natural peanut butter.
